A good place to eat does more than feed you. It changes the shape of the day. It gives you somewhere to arrive, something to look forward to, a reason to linger, and occasionally the quiet pleasure of realising you have found somewhere rather better than expected.

This is The Finer Edit’s home for restaurants, cafés, pubs, bakeries, brunches, afternoon teas, farm shops, food halls and special occasion tables. Some are polished. Some are cosy. Some are by the sea with salt on the windows. Some sit in unlikely places and make a very persuasive case for the detour.

We are interested in food with a sense of place, rooms with atmosphere, service that understands warmth, and menus that know what they are trying to be. Not every meal needs to be grand. It does, however, need to have a reason to be remembered.

You approach on foot, through the cobbles of Folkestone’s old town and under a Victorian brick viaduct, until the building stops you. Cantilevered over the working harbour in charred timber and glass, Rocksalt is one of the most striking restaurants on the Kent coast — and one of the most quietly serious about what it puts on the plate. The fish comes off the day boats working the Channel below. The crab is the best argument for eating locally you will find in a dining room. The view reaches France on a clear evening. It is nowhere near the best thing about it.
